Consultant in Regional Speciality Foods and Catering.


I have a wide experience of food production, catering and the hospitality industry which has lead to my consultancy work in these areas. 


Developing a Regional Identity for Food


Working with Yorkshire Regional Food Group and Wales True Taste, I work to promote the recognition of the best of local produce. And in 2009 I have been working with IKEA in Cardiff to introduce a local flavour to the store. 
In my cookery demonstrations I use the best ingredients available, write books illustrating best use of local produce and creates training schemes to encourage caterers to make good use of local foods and traditional recipes.


Recipe Development


I have worked on new recipe ideas for a number of commercial companies and continue to develop recipes based on local produce for my cookery school.
In 1997, I was involved with the Cask Ale report where I teamed recipe ideas with a range of cask ales, from serving a spicy Thai curry with a fresh hoppy lager to rich fruit cake accompanying a mild ale.


Education and Ideas


In 1999 I joined a ‘think tank’ to help the newly appointed Welsh Assembly create a distinct brand of quality in Wales.
Working within the Education sectors, I joined a team to develop secondary and post school education in Wales.


Advisory Committees


Following an appointment to sit on the newly formed Advisory Committee for Animal Feedstuffs, I was invited to join the Advisory Board for the Food Standards Agency in Wales.  I have also been a member of the advisory committee for the Meat and Livestock Committee.
Today I sit on the advisory committee of BioCop, as a consumer representative and also Foodaware, the consumer group.


Catering Consultancy


Over the years, I have set up and run various restaurants and cafes.  This experience allows me to help others restructure their business.  In particular, Brains Brewery in Cardiff and Nevisport in Scotland.   As a judge I have worked at a variety of Agricultural Shows, with the British Cheese Awards and the Taste Awards of 2007 at the Yorkshire Showground in Harrogate.  In 2009 I have been part of the judging panel for the Great Taste Awards, Soil Association Awards and True Taste Awards in Wales.
